Ingredients


Marinade and Steak


  • 1/4 cup lime juice
  • 1/4 cup orange juice
  • 1/4 cup olive oil
  • 8 garlic cloves, minced
  • 1 teaspoon kosher salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • pinch of ground cayenne pepper
  • 1 1/2 pounds flank steak

Fries and cheese sauce


  • 1 bag frozen seasoned fries, cooked according to package directions
  • 3 tablespoons of butter
  • 3 tablespoons all-purpose flour
  • 1 1/4 cup milk
  • 1/2 teaspoon garlic salt
  • 10 ounces sharp cheddar cheese, grated

Optional toppings


  • avocado, diced or mashed or guacamole
  • pico de gallo
  • sour cream
  • fresh coriander
  • sliced ​​jalapenos, fresh or pickled
  • black olives


Here’s how to do it:


  1. For the marinade, combine the lime juice, orange juice, olive oil, garlic, salt, black pepper, cumin, cayenne pepper and oregano in a mixing bowl. to mix together. Place in an airtight container allowing the steak to marinate for a minimum of 8 hours to overnight.
  2. Preheat the grill or cast iron skillet to medium-high heat and cook the steak to the desired temperature. Remove to a cutting board and let rest. While the steak is on the grill, cook the fries according to the manufacturer’s instructions.
  3. In a saucepan, melt the butter over medium heat. Add the flour and whisk for 2 minutes. Add the milk, whisking constantly to avoid lumps, until the cheese is melted and the sauce is smooth. And salt the garlic and let the mixture thicken for 3-4 minutes. Cover and set aside to keep warm.
  4. Once the fries are crispy, place them on a slightly warmed serving platter. Chop steak, top fries, drizzle with hot melted cheese and add desired toppings.
