We did it. We have reached 2021. And if those first weeks are any indication, this year is going to be just as chaotic as the last. My goal is to make your life easier by providing tips, tricks and recipes to avoid stress in your kitchen.

Always have something to thaw

Let me introduce you to the fridge plate. It’s a plate that you keep in your fridge to remind you to take something out of your freezer. Yours could be a bowl or an old tupperware container. Whatever it is – maybe even a simple note on the door or an alarm on your phone – the biggest downside to cooking dinner is not having something thawed ready to cook.

This is the key to preparing yourself for success. Think about it. You have finished your work and you start to think about what you are going to eat for dinner. But the basis of your meals? They are all still frozen. You don’t have time to defrost anything and instead of going to the grocery store you just order.

The great thing about something thawed is that it gives you flexibility when it comes to meal times. One of the biggest complaints I hear from people about setting up a meal plan for the week is having to commit to dinner in advance. “What if I plan tacos on Tuesday and Tuesday rolls around and I don’t want any more tacos?” “

Having a base out of the box means you can change things on the fly without much work. Frozen chicken breasts can be thawed and grilled for sandwiches and salads, sautéed with vegetables for pasta, wrapped in bacon and baked for a barbecue night. Ground beef can be made into burgers, tacos, spaghetti, shepherd’s pie.

It’s a very simple and basic concept that can work wonders in removing stress at mealtimes. You just have to do it. Go put this plate in your fridge right away and get started.

Three slow cooker chicken recipes to try this week

Your slow cooker – aka your slow cooker – is a great tool to help relieve the stress that comes with planning meals throughout the week.

By preparing everything in advance, it eliminates the manic period between work and dinner where we all rush to try and get something done. It’s also a great option for making big meals to fill the freezer with, which helps get a bit of work done.

This is my go-to recipe for long weekends at the cabin. I got everything in place in the morning so that when we get home from a day on the lake we have a full meal ready to go without any issues.

Frankie’s Chicago Style, new hope

Frankie’s Chicago Style in New Hope became one of our take out outlets when we first closed restaurants in 2020.

Not only is the food delicious (I’m a huge fan of their Sweet Chili Wings), Frankie’s team is committed to supporting the communities around them by tackling food insecurity. I love nothing more than supporting companies that make giving back a corporate commitment.

Besides their wings, I highly recommend the Cuban Classic – pork loin with ham, Swiss cheese and pickles, topped with Cuban mustard sauce on a toasted ciabatta bread – served with a side of tater tots and their pizza by the slice that is. available at the counter when you pick up. We always add a slice or two to our take out order.

Take advantage of the above-average temperatures and sample a craft beer at the beer garden at Uppils Brewing. When the second shutdown took effect, Utepils was one of many establishments in Minnesota that worked quickly to provide outdoor facilities to keep its doors open. Now you can enjoy their gorgeous Fernweh Taproom, but if you’re not comfortable inside they have tents and fire pits outside to keep you warm and happy (beer helps too. ).
